Cucumber Tomato Salad with Prosciutto and Goat Cheese

Since I work with Elementary age kids, I always eat lunch early. This leaves my hungry in between work and dinner. This is my go-to snack with a little something extra. I usually don't have prosciutto and even love this dish without it. It's a healthy option and surprisingly filling.

Cucumber Tomato Salad with Prosciutto and Goat Cheese

1/2 cucumber thinly sliced and halved
6-8 cherry tomatoes sliced in half
1/2 tablespoon extra virgin olive oil
1 slice of prosciutto sliced into 1 in. pieces
1/2 tablespoon of goat cheese crumbles

1. In a bowl combine all the ingredients and stir with a fork.
